There are really good reasons to consider eliminating or at least reducing meat consumption: health concerns, environmental sustainability concerns and animal rights. I feel strongly about all three, but I've not been able to bring myself to give up meat for good — I just like cheeseburgers too much (though I now eat only one a month.) But about two years ago, I made a decision to at least try to reduce my consumption of beef, lamb and pork. If there's a vegetarian entree that appeals to me at a restaurant, I order it. And I no longer cook any of those meats at home. I've spent a lot of time searching for meat substitutes. I'm not so fond of Tofu, though I really like Seitan. And recently, I discovered Gardein Protein – a unique blend of soy, wheat and vegetables that's super healthy and has the authentic taste and texture of premium lean meat.
