My Latest Nutritional Obsession: Chia Seeds


Chia Like many of you, my knowledge of Chia… "Ch Ch Ch Chia!" was limited to the Chia Pet – that '80s successor to the '70's Pet Rock gift sensation. But I've recently discovered that Chia seed is a highly nutritional seed of a plant in the mint family, that has been cultivated since the time of the Aztecs.  Rich in Omega 3 fatty acids and fiber, Chia is really, really good for you.  One ounce (two tablespoons) of Chia seeds has 4 grams of protein, 11 grams of dietary fiber, and significant quantities of calcium, manganese and phosphorus, plus 4915 mg of Omega 3s.  Mix the Chia in water (it absorbs 9 times it's weight) and drink it, or eat it as a gel.  Or mix the seeds into other foods, from baked goods to meat loaf.
