The Best Non-Stick Cookware: Green Pan

So, building on Friday's egg timer post, I thought I'd recommend a few of my favorite egg-cooking tools, starting with the best non-stick cookware: Green Pan.  Green Pan is a ceramic-based non-stick technology that is more stick-resistant, heat-resistant and scratch resistant that traditional resin-based non-stick coatings like Teflon. In the US, Green Pan coatings are available on Martha Stewart EcoCook Fry Pans at Macys.com (free shipping on orders of $75 or more through 12/1/08 with this Macys.com link.)  and Todd English Cookware at HSN.com. These pans have the advantage of being usable at high heat (most traditional non-stick is not recommended above medium) as well as in the oven for finishing egg scramble/fritata recipes.  Anyone who likes frying or scrambling eggs should have one or two of these pans.

    I just bought a set of Green Pan skillets. Although I much prefer them to the resin based toxic cookware, they don’t hold a candle to the best nonstick cookware in the world… ScanPan. Their Ceramic Titanium coating is unmatched. While the Green Pan started to show wear and now has serious stick issues, the scanpan I have been using for years. You should look into ScanPan cookware. It does cost more, but if you check eBay stores, you can get it quite reasonably.

    I got a couple of Green Pan skillets as a gift two years ago. They worked great for a few months, then began to stick. By the time they were a year and a half old, they were a total disaster – more egg stuck to the pan then got served – and I ended up having to throw them away. I would NOT recommend buying them again.
